Deconstructed Wedge Salad with Pulled Pork, Steak, or Chicken

INGREDIENTS
Great recipe for get togethers & groups!
- 1 Head – Iceberg lettuce; cut into wedges
- 1 Bag – Fresh spinach for garnish
- 5 slices – Bacon; cooked & chopped
- Salt & pepper to taste
- 4 – Hard boiled eggs; chopped
- 1/2 cup – Red onions; thinly sliced
- 1 cup – Mushrooms, artichoke hearts, or you favorite hearty veggies; chopped
- 1 cup – Avocado; sliced
- 1 cup – Cherry tomatoes; sliced in half
- Your favorite Blue Cheese or Ranch dressing (we love PHD Homemade Buttermilk Ranch)
PICK A PROTEIN:
- Grilled chicken, steak, pulled pork, brisket, shrimp, etc. (This recipe pairs well with PHD Crock Pot Pulled Pork)
Serving Size: Protein & veggies dependent on allowed amount per individual meal plan
COOKING INSTRUCTIONS
Step 1: Line the bottom of a large sheet pan or platter with fresh spinach. Cut iceberg lettuce into wedges and set aside.
Step 2: Take all salad toppings; bacon, hard boiled eggs, red onion, hearty veggies, avocado, and cherry tomatoes & line them individually over the sheet pan that is covered with spinach.
Step 3: Take each wedge and top with all your favorite salad toppings. Top with your favorite protein of choice and dressing! Sprinkle with salt & pepper to taste.
